Dairy Free Chocolate Chip Cookies!!!!



Hey Everyone!

In the spirt of Thanksgiving in less than a month, I wanted to share with you my favorite chocolate chip cookie recipe. I used to be the worst at making cookies, they would always turn into hockey pucks within minutes of coming out of the oven and they just didn't have a good texture.

After looking at Pinterest forever and trying many different recipes, I finally found one that worked! I've changed it here and there a little bit, making it dairy free on occasion, but it's always been just as good! They're gooey and chocolatey, everything that it should be in a delicious cookie (in my opinion of course).

Okay enough talking, let’s get into it! Be prepared to be asked to make these at every party you attend. I've made these for baby showers, Halloween parties, and many more occasion. It's worth it though and honestly doesn't take that much time.

Prep: 15-20 minutes 
Cook Time: 10 minutes MAX
Total Time: 25-30 minutes

Ingredients:
  1. 14 tablespoons unsalted butter, softened (or 14 tablespoons of coconut oil or other dairy free butter)
  2. 1 cup granulated sugar
  3. ½ cup light brown sugar
  4. 2 eggs
  5. 1 teaspoon vanilla extract
  6. 2½ cups flour (+ a few extra tablespoons, see * I used an extra tablespoon)
  7. 1 teaspoon baking soda
  8. 1/2 teaspoon salt or sea salt
  9. 3 cups, any variation of chocolate chips or chocolate chunks (if you're doing dairy free, I use one bag of the mini chips dairy free, it's more than enough and those are expensive chips!)


Instructions:
  1. Preheat oven to 350F and spray cookie sheets with non-stick spray.
  2. In a metal bowl, place the butter in the bowl, and place it in the preheating oven.
  3. Leave the butter in the oven until it's about half melted. It took mine a few minutes. Then take it out of the oven to cool.
  4. Once the butter as cooled, add both types of sugar and mix until light and fluffy.
  5. Add vanilla and eggs, beating in between each until just mixed.
  6. Add the flour, baking soda, and salt, until just combined.
  7. *If needed, add more flour, about a 1/2 tablespoon at a time, until the dough comes together and isn't sticking to the sides.
  8. The fun part! Fold in your chocolate chips until just mixed.
  9. Use a cookie scoop or ice cream scoop and place on the greased cookie sheet.
  10. Bake on tray at a time for 10 minutes for large and 8 minutes for small. Do not overcook these. When I take out my cookies, they look a little raw, but they set up so don't worry. If you over cook them they will be hard after they set up.
  11. Take cookies off the tray and place on a cooling rack.
  12. I usually get 30-36 smaller cookies from this recipe. It honestly just depends on how big you make them. They'll be good regardless.
  13. Store in an air tight container if you're not enjoying right away.

    I hope you guys all love this recipe as much as I do. This is honestly the best cookie recipe I've ever used. They come out good every time and are seriously addicting. I added the dairy free version as well. That's another great thing about this recipe, it's so easy to make it dairy free. I will warn you that those dairy free chocolate chips are expensive! But totally worth it if you're dairy free, even if you're not, they're super good and taste basically the same.
